Meet the chef

Frans Xaver Ziegerer

Chef Franz Xaver Ziegerer has been with us for 12 years. He received a thorough education in his native Germany and has since worked at several prestigious restaurants in Switzerland and Sweden.

He has a strong environmental philosophy that goes hand in hand with our Svanen certification and he is very fastidious in his choice of ingredients.

Xaver has won the competition "sharpest chef" twice and now he is with the jury in this competition. He is engaged in the Culinary Skåne and he has had many young chefs under his wings. Xaver's motto is - like ours - "a well-satisfied guest is our best reward".
